The best Apple dessert: Tart de Pommes a la Normandie, or the French Apple Tart

I know apple pies are typically associated with America, but I associate them with overly sweet, gooey insides that sit atop a soggy pie base. But the French Apple Tart has changed my perception of baked apple desserts: a buttery, crunchy crust with a hard tart base, the tart is filled with delicious lime-infused vanilla apple compote (made with vanilla pods, whilst the squeeze of lime truly enhances the flavour of the apple) and topped with crunchy yet naturally sweet slices of baked apple on top. As my mother said, anyone who tastes this will realise that they can honestly eat the whole thing by themselves, it’s that good.
